Vegan Lemon Poppyseed Bread
This vegan dessert with no added sugar is sure to satisfy your sweet tooth without helping you pack on the pounds thanks to Heart of a Baker!

Directions
- Preheat oven to 350°F
- Grease and line a loaf pan with parchment paper
- In a large mixing bowl, whisk together flour, salt, baking powder, baking soda, and poppy seeds and set aside
- In a medium mixing bowl, mash the banana and mix in the coconut oil, stevia, vanilla extract, and lemon juice with a hand mixer for about 30 seconds until smooth
- Gently combine wet and dry mixtures using a spatula to fold together
- Add in Zevia and continue to fold until combined completely
- Transfer mixture to loaf pan and bake for 40-45 mins until toothpick test comes out clean

- 1 1/2 cups all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/4 tsp poppy seeds
- 1 ripe banana
- 1/3 cup coconut oil, melted
- stevia equivalent to 3/4 cup sugar
- 1/2 tsp vanilla extract
- juice and zest from 2 lemons
- 1/2 cup Zevia Lemon Lime Twist
