Coconut Cream Soda Martini

Directions
Coconut Whipped Cream
- Refrigerate a can of coconut milk overnight.
- Open the can of coconut milk and scoop out the solid coconut cream. Leave the liquid coconut water.
- Beat the coconut cream on low with an electric mixer for 5 minutes. Increase speed to medium and continue whipping, scraping down the sides of the bowl occasionally. Drain any liquid.
- While the coconut cream may look curdled, keep whipping until smooth.
- When the coconut cream looks smooth and uniform, increase speed to high and beat until soft peaks form.
- Store coconut whipped cream for up to 2 days in the fridge. Remove from fridge at least 30 minutes before serving.
Coconut Cream Soda Martini
- Combine rum and coconut creamer to a shaker over ice. Shake until combined.
- Strain mixture into a martini glass until half full and top off with Zevia Cream Soda.
- Garnish with coconut cream and coconut flakes. Enjoy.
